What you'll cook
Fresh egg pasta dough from scratch
Flour, eggs, a wooden board, and your hands. Teams learn to knead, rest, and roll — the feel of good pasta dough is something you remember in your palms long after the event.
Tagliatelle & a second shape
From the same dough: classic tagliatelle hand-cut to width, then a second shape — pappardelle, farfalle, or maltagliati depending on the day. Two shapes, one dough, endless satisfaction.
Two classic sauces — one simple, one rich
A fresh tomato sauce built in minutes (the Italian secret most people overcomplicate), alongside a slow-braised ragù that simmers while you make pasta. The contrast between them is the lesson.

How the day unfolds
- 1
Arrive at Kachatelier — aprons on and welcome drinks ready. Matteo introduces the Italian philosophy of cooking: simplicity, quality, and presence.
- 2
Everyone gets their own board and rolling pin. Mixing, kneading, and resting the dough — Matteo guides each team member.
- 3
The rolling and cutting session: every table develops their own style. Some tagliatelle come out perfect. Others come out beautifully imperfect.
- 4
The ragu has been slow-cooking throughout. While pasta dries, teams assemble the tiramisu.
- 5
Sit-down dinner together: the full meal your team made, with recipe cards to take home.

Is pasta making suitable for total beginners?
Perfect for beginners. Making pasta requires no prior skill — just willingness to get your hands floury. Matteo guides every team member at every step, and the process is instantly satisfying.
What pasta shapes will we make?
The core menu is tagliatelle or pappardelle with a slow-cooked ragu. For groups who want more, we add tortellini (a wonderful teamwork dish) or gnocchi as an extension.
Why is pasta making so good for team building?
Kneading, rolling, and cutting pasta are naturally social activities — you work in pairs and small groups, share the table, and help each other. The repetitive, meditative nature of pasta making also creates a relaxed, open atmosphere.
Is this really led by the founder of ChefPassport?
Yes — Matteo Ressa, founder and CEO of ChefPassport, personally leads the Flour Power Pasta Workshop. It's a unique experience you won't find elsewhere.
What's the difference between this and a regular cooking class?
The Pasta Workshop is more intimate and craft-focused than our other classes. Fewer dishes, more depth. You leave with a real skill — fresh pasta you made from scratch.
