Saag Paneer with fresh spinach
A delicately spiced fresh-spinach sauce with marinated, pan-fried paneer. Teams learn to wilt, blend, and season — a dish that looks complex but comes together with the right technique.
Hand-ground curry paste & traditional dal
Spices toasted and ground by hand in a mortar, built into a base paste for a traditional dal. The cornerstone skill of Indian cooking — once you know it, every curry changes.

Arrive at Kachatelier — aprons on, welcome drinks ready. Chef Corrie opens with the spice presentation: smell, touch, and taste 25 authentic spices.

Everyone assembles their personal Masala Daba — choosing their 6 favourite spices for the take-home tin.

Cook in small groups: the Saag Paneer and curry develop in parallel across the workstations.

Having grown up in Australia, her food discovery travels through Europe and Asia have added to her extensive list of recipes. None at all. The spice introduction is part of the class — most participants are surprised how many of the 25 spices they actually recognise by smell. Chef Corrie makes the discovery accessible and fun.
What is a Masala Daba and why do teams love it?
A Masala Daba is the traditional Indian spice box — your personal selection of spices to take home. Each person chooses their own spices, making it one of the most individual and memorable take-home moments of any cooking class.
Can all dietary requirements be accommodated?
Yes. The Indian menu naturally offers vegan and vegetarian options — Saag Paneer is vegetarian, and a full vegan curry is available. Gluten-free adaptations are also possible.
