Heather Madeira — 'The Cooking Musician' — doesn't just teach Chinese food, she tells the story of a civilisation through its regional cuisines. The Chinese Classic Feast is a 120-minute journey through your chosen region: the bold fire of Sichuan, the warm family comfort of Taiwanese cooking, or the refined elegance of Cantonese cuisine. Teams cook a full 3-course meal and sit down to a proper dinner. Nobody leaves without a story to tell.

One regional theme per event — chosen in advance based on your team's preference or Chef Heather's seasonal recommendation. Sichuan burns bright, Taiwanese tells a family story, Cantonese shows restraint as mastery.
Within the chosen regional theme, Chef Heather selects dishes based on what is in season and what best showcases the cuisine's depth. The menu is curated for your group size and dietary needs.

Heather learned to cook from her grandmother who used food as a means of delivering love and kindness. After meeting her Taiwanese-American husband, she began a journey learning about Chinese and regional cuisines. Her philosophy: all problems can be solved with an open mind while sharing a meal.

The main course: the most complex element — Heather circulates, shares personal stories from her family's kitchen, and ensures every team's dish develops correctly.
The dessert: a lighter finish that rounds the regional journey and creates a natural moment for reflection.
Sit-down dinner together — a full 3-course Chinese feast cooked entirely by your team, served with Heather's recipe cards and a glass of something suitable.
